Ingredients
3 tbsp honey
3 cups (330g) flour
¾ cup (170g) sugar
1 tsp baking soda
1 tbsp gingerbread spices
(or ground cinnamon and nutmeg)
1 egg
Method
Preheat the oven to 325°F (160°C).
Melt the honey on low heat and mix it into the flour with a wooden spoon. Gradually add in sugar, baking soda, gingerbread spices and one egg.
Tip: Put flour on both sides of dough when putting on baking sheet.
Knead the dough until smooth and roll out into a think sheet with a rolling pin. Cut out shapes with a biscuit cutter and place the biscuits on a baking pan greased with butter or lined with parchment paper.
Bake in the oven for 10-15 minutes, until the biscuits are golden brown.
Tip: Leave biscuits on paper to cool – easier.
You can sprinkle the biscuits with powdered sugar or icing. To make icing, mix powdered sugar with lemon juice until you achieve a thick consistency. Spread the icing on the cooled biscuits and wait a couple of minutes until the icing hardens.
