Chilli Squid – Slimming World

Chilli Squid

Serves 4  •  Ready in 30-60 Minutes  •   Sins per serving FREE

Ingredients

1lb 8oz fresh squid, cleaned and cut into bite-size rings
2 tsp sea salt
Juice of 2 lemons
1 tsp ground coriander
1 tsp ground cumin
1 tsp hot chili powder
1 tsp tomato paste
1 red chili pepper, seeds removed and finely sliced
1 tsp peeled and finely grated ginger root
1 garlic clove, minced
Low-calorie cooking spray
Large handful of chopped cilantro
1 small red onion, very thinly sliced
Small handful of chopped mint

Method

Place the squid in a bowl. In another bowl, mix together the sea salt, lemon juice, ground spices, chili powder, tomato paste, chili pepper, ginger, and garlic. Pour this mixture over the squid. Toss to coat evenly, cover, and allow to stand at room temperature for 12–15 minutes.

Spray a frying pan with low-calorie cooking spray and place over very high heat. Working in batches, lift the squid from the marinade and sear in the hot pan for 2–3 minutes. Remove and keep warm in a serving bowl while you repeat the steps for the remaining squid.

Stir the chopped cilantro, red onion, and chopped mint with the cooked squid, toss to mix well, and eat immediately.
