Carrot Soup – Old Recipe

Carrot soup

An old favourite that has stood the test of time.

2 rasher of smoked back bacon chopped
450g carrots chopped
1 onion, 2 sticks celery sliced
450ml vegetable stock
450ml milk
Salt & pepper

Dry fry bacon for 2 minutes, add vegetables, stock and milk.  Bring to the boil, simmer covered for 30 minutes or until vegetables are tender.  Drain off liquid and reserve, blend vegetables and return to pan with liquid, reheat and season to taste.
